Aperol Orange Creamsicle

I have a major summer obsession with Aperol! I love drinking the classic Aperol Spritz but I also love making creative cocktails with this lovely spirit. It mixes really well with other spirits like gin, vodka, and bourbon but is also great as the main the spirit in cocktails. The color is the most beautiful orange hue which will give any cocktail you make a beautiful color. The cocktail I made for you today is no exception. My second obsession this summer is taking a lot of my “sweet” childhood memories and turning them into delicious summertime drinks! Remember this Bourbon Root Beer Float? Well, today I have remade the Orange Creamsicle into a fabulous cocktail. Instead of using a traditional cream I decided to use coconut milk which was so light and lovely. I also used a little bit of fresh orange juice and of course topped the cocktail with orange soda. The Aperol combined with the coconut milk and orange soda give your typical orange creamsicle flavor a kick but it also tones down the sweetness of the orange soda. After topping off the drink with soda I made a cute little design with several drops of the coconut milk to give it a fancy look. Do you have any childhood favorites that would be good cocktails? Recipe: Aperol Orange Creamsicle
Ingredients
2 ounces of Aperol
2 ounces of coconut milk
2 ounces of orange soda
½ ounces of fresh orange juice
½ cup of ice
Garnish: Orange slice and a couple of drops of coconut milk
Instructions
Fill a cocktail shaker with Aperol, coconut milk, orange juice, and ice
Shake mixture then strain into serving glass
Top drink off with orange soda
Garnish with orange slice or a couple of drops of coconut milk to make a cute design!
Yields: 1 serving
