Here we use Perlini to make the Carbonated Pegu Club cocktail. Fully carbonating cocktails is a good way to put a modern spin on classic cocktails. With Perlini, you can carbonate any cocktail you put in the Perlini shaker. The Pegu Club is a cocktail from the 1920s, British colonial era Burma. There was a club called the Pegu Club and this was their house cocktail. It is great carbonated or non-carbonated.

Carbonated Pegu Club

1.5oz gin

.5oz orange curaçao

.5oz lime juice

1 dash orange bitters

1 dash Angostura bitters

Add all ingredients to the Perlini shaker and pressurize with CO2. Shake and then pour into a chilled cocktail glass.
