Cocktail: Blackberry Buck

Berries, it's your time to shine!! So many applications for in season berries. I happen to love Blackberries. And, I also happen to love Rosemary. I think Rosemary goes with just about anything. Sometimes I have to redirect myself from putting rosemary tincture in every new cocktail creation.
Infusions. One of the best and easiest ways to incorporate flavors into whatever base spirit you like. So, obviously, this infusion is of Blackberries and Rosemary. This infused spirit can be applied to many different cocktails. Vodka is used her but try it with Tequila or even Gin. Throw some bitters in the mix and have an infused martini!
Blackberry Buck
2-2 1/2 oz. Blackberry-Rosemary Infused Vodka
1 1/4oz. Simple Syrup
3/4oz. Lime Juice
Ginger Beer
*Add all ingredients to shaker minus Ginger Beer. Top with ice and shake. Strain into highball glass over fresh ice and top with Ginger Beer. Garnish with Rosemary, Lime wheel and Blackberries.
For Infusion:
About half a pint of Blackberries, 3-4 sprigs of fresh Rosemary and 375ml of vodka. Add all ingredients to a jar or holding container. Let sit for 2 weeks shaking once daily. Strain, bottle and enjoy. Cheers from www.foodietails.com !
