Now in soft open, Redbird officially opens January 7.

When Grace closed, the idea was Chef Neal Fraser was going to move his restaurant to Downtown. As the years went by, a new name popped up- Redbird. Although located at Vibiana, there are three separate kitchens to accommodate Redbird and the catering. The third kitchen is a prep kitchen.

Billed as Modern American, I was invited to a party where we nibbled on crudo, posole, farro with duck and more. However, the menu is subject to change and will be very seasonal. Drinks are by bar star Julian Cox. Of the cocktail offerings that evening, the focus seemed to be on gin and designed to be consumed with food. But knowing Julian, I expect he has a drink or two for his whiskey swilling friends.

I’m looking forward to checking it out for dinner soon.
