Today is National Absinthe Day! Recently I attended a tasting for Pernod Absinthe at Pour Vous.

We were welcomed with a punch of Green Beast. The refreshing drink were served in a great two-in-one straw/glass.

Green Cobbler

Another drink on the refreshing side is the Green Cobbler. People get caught up with the old-timey ritual of sugar and fire with absinthe and it’s overlooked in cocktails. All you really need to do with a good absinthe is dilute it a bit and it’s quite perfect in a ice cold cobbler.

Earthquake

Earthquake

Just because it’s an old cocktail doesn’t mean it’s a great drink. The Earthquake from the Savoy book was not my favorite. With three spirits, this drink was fighting with itself. And I could not call it an absinthe- or Irish whiskey – or gin drink. Perhaps they call it an earthquake from the amount that gets conveniently spilled when no one was looking.

Earthquake – Pernod Absinthe, Jameson, Beefeater 24 gin

Other drink ideas would be to mix Pernod absinthe in place of gin in a Last Word variation. Or go with the classic sparkling wine sipper, Death in the Afternoon of absinthe and sparkling wine.
