Mezcal Monday: A Palenque . . .

Well I posted the photos from my trip to tequila, but not my trip to Oaxaca . . .WHAT???
Oaxaca was a paradigm shift. The people, the kindness, the mezcal. There was so much to see and experience I can not wait to return.
These photos are of the palenque that makes Mina Real and Don Amado. They have been doing mezcal distillation here for 300 years (give or take). There are-at least-11 generations of technique and skill past down through this family line and it is clear in their mezcal.
You will see that they have a couple earthen pits (for Don Amado) and also a clay oven (for Mina Real) to roast the agave. They use a an 'Olla', or a ceramic stills to distill both of these delectable mezcals, but I am going to let the pictures do the talking.
