Mojitos…Debris Free

Exactly how I like my mojitos. The one thing that keeps me from ordering a mojito is all the debris in the glass. I just can’t get into it. BUT, I can can get into this one. You should too! Our Pineapple infused rum is done and it’s time to taste. What better day than National Rum Day?!! Here’s a mojito…
The Yellow Mojito:
2oz. Pineapple Rum
1 1/4oz. Lime Juice
1 1/2oz. Pineapple Syrup
1/4oz. Yellow Chartreuse [Optional]
5 Or 6 Mint Leaves
Club Soda
*For Pineapple syrup, juice the the pineapple pieces left over after straining and bottling rum. Add the pineapple juice (it should come out as more of a puree) to 1/2 cup of sugar and 1/2 cup of water. Let the mixture simmer for about 30 minutes to cook off the alcohol (or until you can no longer smell the alcohol). Let cool and bottle.
*Add all ingredients to shaker. Fill with ice and shake until chilled. Double strain into highball glass over fresh ice. Top with club soda and garnish with mint and/or lime wheel. Cheers!
