Pineapple Coconut Martini

It might be impossible to be in a bad mood while drinking anything with pineapple juice, coconut rum and lime juice.  Inspired by a pineapple cocktail we recently had at a local restaurant, Paul created this recipe that also includes gin, vanilla extract, Lillet and sunshine.

Pineapple Coconut Martini with gin, lime juice, vanilla and Lillet
Ingredients
  • 2 oz Pineapple Juice (Goya)
  • 1 oz Gin (Broker's Gin)
  • 1 oz Coconut Rum (Captain Morgan's Parrot Bay)
  • 1 drop vanilla extract
  • ½ oz lime juice
  • ½ oz Lillet
  • 2 ice cubes
Instructions
  1. Add all ingredients into a cocktail shaker, and shake vigorously for 30 seconds. Pour into 2 cocktail or coup glasses and garnish with lime.
