April 22nd is Earth Day, and for those of us looking to help save the planet and enjoy a good drink at the same time, we’ve got you covered. This weeks cocktail of the week is the Honey Comb, a new favorite of ours we tried last weekend featuring Veev, The world’s first Acai spirit.

VeeV was launched in 2007 by two brothers, Courtney and Carter Reum, after a surfing trip to Brazil where they discovered smoothies made with the Açaí berry, known locally as “purple gold” because of its health properties. Inspired by the wonderful superfruit, they left behind their investment banker roles at Goldman Sachs with a singular goal to start a unique sustainable liquor company and never looked back.

So what makes Veev so perfect for Earth Day? You know how most of us have heard that cliche term “Save the Rainforest”? These guys are actually doing it. They donate 1% of all sales to saving the rainforest, as well as other environmental initiatives. And besides their base product Veev, they now offer pre-mixed Vitafrute cocktails, each of which is organic, and contains 125 calories or less. So, how about that drink? The Honey Comb:

• 2 oz VeeV
• 3/4 oz Bourbon
• ½ oz Lemonade
• ¼ oz Honey (or Agave)
• Dash of Orange Bitters
• Garnish: Honey Sugar Rim + Lemon Twist
• Glassware: Cocktail or Rocks

Shake all ingredients vigorously with ice and pour into a martini or coupe glass rimmed with Honey Sugar. Garnish with a lemon twist.
