Summer's Here: the Tom Collins

The Tom Collins is an old drink from the 1800s that's crisp and refreshing. It's basically gin'd up lemonade. You can make it with any gin, but it was most likely made with old tom gin originally. It's perfect for the warm summer months.
Tom Collins
2oz gin (Ransom Old Tom gin)
.75oz lemon juice
.5oz simple syrup
2-4oz club soda
Add the gin, lemon juice, and simple syrup to a cocktail shaker. Add ice and shake. Strain into an ice filled collins glass. Top with club soda. Serve with a straw. Lemon garnish optional.
