Baked Apples are probably one of the healthier desserts you can have, and they'll bring back memories. The aroma is heavenly: sweet, crisp, spicy and fragrant. Apples are extremely popular in the fall, but this can work as a year-round dessert.

Ingredients

  • 4 large apples (I like Granny Smith, but works well with most types of apples, especially Braeburn, Jonagold, Granny Smith, or Jonathan).
  • 1 cup oats, granola or Trader Joe's Grainless Granola
  • 2 tbsp honey
  • 1 tbsp coconut oil
  • 1 tsp cognac
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg


Instructions

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with tinfoil or use a non-stick cooking oil.
  3. Wash apples; core and cut in half.
  4. Use a spoon to scoop out the flesh to make a shallow bowl for the filling.
  5. Discard cores and seeds, and chop the remaining bits of apple left from making the bowl.
  6. Mix oats/granola, spices, apple pieces, cognac, honey and coconut oil in a small bowl until well combined.
  7. Fill apples with 1⁄4 cup of the mixture, and place on prepared baking sheet.
  8. Bake for 30 minutes, or until apple is tender and filling is brown. Top with ice cream and/or whipped cream, if desired.
