Cognac Baked Apples

Baked Apples are probably one of the healthier desserts you can have, and they'll bring back memories. The aroma is heavenly: sweet, crisp, spicy and fragrant. Apples are extremely popular in the fall, but this can work as a year-round dessert.
Ingredients
- 4 large apples (I like Granny Smith, but works well with most types of apples, especially Braeburn, Jonagold, Granny Smith, or Jonathan).
- 1 cup oats, granola or Trader Joe's Grainless Granola
- 2 tbsp honey
- 1 tbsp coconut oil
- 1 tsp cognac
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
Instructions
- Preheat oven to 350 degrees.
- Line a baking sheet with tinfoil or use a non-stick cooking oil.
- Wash apples; core and cut in half.
- Use a spoon to scoop out the flesh to make a shallow bowl for the filling.
- Discard cores and seeds, and chop the remaining bits of apple left from making the bowl.
- Mix oats/granola, spices, apple pieces, cognac, honey and coconut oil in a small bowl until well combined.
- Fill apples with 1⁄4 cup of the mixture, and place on prepared baking sheet.
- Bake for 30 minutes, or until apple is tender and filling is brown. Top with ice cream and/or whipped cream, if desired.
