La Caravedo pisco

We never turn down a good pisco drink. But there’s something about the start of summer that always has us leaning toward the Pisco Sour. It’s tart, it’s refreshing, and it’s a welcome change from our whiskey-soaked winters and gin-heavy springs. This summer, our first Pisco Sour of the season features La Caravedo Pisco, a brand new expression from Pisco Porton. And like Pisco Porton, La Caravedo is made by Master Distiller Johnny Schuler at Hacienda La Caravedo in Ica, Peru.

La Caravedo Pisco takes its name from the distillery, which was established way back in 1684. The spirit itself is a “pisco puro,” which means that it’s produced from only one of the eight grape varietals allowed by Peruvian law. La Caravedo comes from the Quebranta grape, a non-aromatic varietal from the Peruvian coast known for its body and fullness of flavor. And about eight pounds of those Quebranta grapes are used to produce each bottle of La Caravedo Pisco.

TASTING NOTES

La Caravedo Pisco pours crystal clear in the glass. On the nose, it’s earthy and slightly sweet, with floral botanicals and fruit. Take a sip for crisp flavors of grapes, apples, grains and a hint of sweetness. It’s clean and lively on the palate, with a lip smacking quality that kept us going back for more. The finish is long, dry and warming.

This is another fine example of quality pisco-making that stands up tall alongside its older sibling, Pisco Porton. Try La Caravedo in your next pisco sour, or just try it in general. While most drinkers don’t consume pisco straight, that sure didn’t stop us.
