This cousin to the Boulevardier comes from Steva Casey, bartender at Saturn in Birmingham, Alabama. We recreated it at home and can confirm that it is, in fact, quite tasty. The Clyde May’s Whiskey is a solid backbone here and provides a nice foil to the equal measures of bittersweet Cynar and the sweet, aromatized wine that is Dubonnet.
This craft cocktail calls for the flagship 85 proof Clyde May’s, and that works just fine. But we actually preferred this drink kicked up a notch to further temper the sweetness. So for that, we reached for the 110-proof Clyde May’s Special Reserve. Just do what feels right. Here’s the recipe:
NEVER LOVE A WILD THING
1oz Clyde May’s Whiskey
1oz Cynar
1oz Dubonnet Rouge
Combine ingredients. Stir and serve in an old fashioned glass over ice.
