The Bridgetown Docks Barrel-aged Old Fashioned

Last year I had the pleasure of being invited to do a one-day apprenticeship with the master distiller for Mount Gay Rum Allen Smith; who has been overseeing the brand's blending and maturation facilities for more than twenty years. I learned a lot from him and with his help was able to create our own blend of Mount Gay Black Barrel that is exclusive to my venues.
With this I wanted to create an simple, approachable, yet elevated cocktail that has light refreshing notes yet would highlight this amazing spirit and peak consumers interest when it comes to using and consuming premium rum. The aging in the oak barrels really brings a nice finish to help balance the citrus and sweet notes of the cocktail, and with the popularity of the old fashioned as of late it was a perfect marriage of ideas.
Allen Smith himself has since been in and it was a huge compliment and honor to have his seal of approval on my cocktail offering.
The name "Bridgetown Docks" comes from the main dock in Barbados where they do their primary and exporting and importing.

Mount Gay Black Barrel Rum, Amaro Montenegro, hibiscus and chamomile lightly infused grade A maple syrup, Regen's orange and angostura bitters. Aged for a minimum two weeks in oak barrels. Poured into a generous double old fashioned ball glass and garnished simply with an expressed orange peel.
