The flavor of the classic holiday cookie combined with the allure of absinthe may cause you to see gingerbread men dancing under your Christmas tree. And you thought we were going to see a green fairy, didn’t you?

Lucid Gingerbread Man

• 1 oz. Lucid Absinthe
• ½ oz. demerara sugar syrup (or simple syrup)
• ½ oz. fresh lemon juice
• ¼ oz. green chartreuse
• Dash of freshly grated cinnamon
• Dash of freshly grated nutmeg

Instructions:

In a mixing glass, muddle 3 dials of fresh ginger. Shake thoroughly with ice, then strain over fresh ice in a highball glass.

Garnish with a small Christmas tree gingerbread cookie
