While travelling in India, I discovered and fell in love with the Pomegranate. What started as hours of prep, died hands and a delicious result, is now a lifelong respect for this wonder fruit. The pomegranate is so much more than grenadine or colour. It is truly one of the worlds super fruits. This cocktail is made to express that specialty and keep it simple for the classics sake.
Take a Classic Mule, sub gin for Vodka (flavour!!), shorten and serve cold but neat.
1.25 oz Quality Gin (Made originally with Death's door)
.5 oz Carpano Antica
.5 oz Pama Pomegranate Liqueur
.25 oz Campari
.5 oz fresh lime juice
.25 – .5 oz 1:1 simple syrup (to taste)
1 tbsp fresh pomegranate seeds
2-3 oz with “Old Thyme” Ginger Beer (to taste)
Muddle seeds with lime juice and syrup. Add ice, add liquor, shake vigorously and strain into chilled coupe, top with ginger beer. Optional Mint Sprig Garnish
