It was a amazing time to be behind the bar. In 1976-77 Bailey’s Irish Cream hit the American shores and cocktail creativity went wild. We poured Bailey’s on it, in it, and all over it. One result: a Black Russian became the World famous Mudslide, originally a rocks drink that morphed into the frozen Mudslide, one of the top 4 blended drinks in the world today.

My personal favorite Bailey's inspired creation, one of so many that were born in those early years, are the flavored Mudslide shots I made called Ice Cream Cupcakes, part of my Adult Ice Cream portfolio that includes Captain, Jack Daniels, Bacardi and Mojito sherbets and ice creams for ice cream floats. The recipe is simple and the flavor combinations endless due to the madness of modern vodka infusions.

Blend up a Vanilla, or Raspberry, Blueberry or Bacon Mudslide. Blend thin enough, so it may be poured into shot glasses. Then add a Bailey's flavored whipped cream swirl on top and you have my Ice Cream Cupcakes. If you are adventurous try Mudslide shots made with Stoli Pepar. Crazy, yes, but taste bud bending exciting.

We cannot forget those classic shots like Slippery and Buttery Nipple and the Blow Job that followed.

And then came the notorious Car Bomb, a shot of Bailey’s and Jameson(Kahlua optional) slid into a 5 oz. glass of Guinness. Perhaps not politically correct, but it did spawn a new class of drinks in mixology called Bombs; Jaeger, Sake, and so many others.(the Papelbomb in Boston).

But I digress. As wonderful as the frozen Mudslide is, in terms of its flavor profile, it does not compare to the McSlide, another offspring of the Bailey's Irish Cream Clan. Yes, an Irish Mudslide. A Mudslide with Jameson’s Irish Whisky instead of vodka. What a flavor profile. So, next time you are feeling Beachy, or just crave some Adult Ice Cream, order a McSlide.

A side note on the Car Bomb for those who feel it is negative or politically incorrect.
