A cocktail that came from inspiration from two international bartenders, Jamie Boudreau and Tony Conigliaro. In Tony C's book, the Cocktail Lab; he has a mallow root foam cocktail that was to die for and a few years back on one of my many visits to Canon, I saw Jamie had a cocktail in a vintage lunch box. With both of these inspirations, the After School Treat was born.

I love whimsical cocktails that can be very elevated but grounded in fun. This is one of those cocktails, I also had a local comic artist draw a comic about whisky based around his character, the Perogi Cat. Along with the comic, you also got two Chips Ahoy cookies to snack on.

Averna loves being mixed with chocolate and rootbeer, they all just play so well together. The local root beer that we can get from Phillip's is an outstanding example of the beverage. Half root beer float, half milkshake, the After School Treat is a whimsical take on a soda shoppe drink of yesteryear.

AFTER SCHOOL TREAT

2 oz. Averna

2 oz. Phillip's Intergalactic Root Beer

Chocolate Milkshake Foam

Glass – Vintage Milk Jug

Method – Build Averna then foam, then pour in root beer

Garnish – In Vintage lunch box with Chips Ahoy cookies and comic

MARSHMALLOW SYRUP

910g water

70g mallow root

15g vanilla essence

910g sugar

  • Put all on med heat and simmer til sugar is dissolved
  • Strain and bottle

CHOCOLATE MARSHAMLLOW FOAM

70mL Marshmallow syrup

200mL chocolate milk

200mL whipping cream

  • Charge in a iSi
  • Label and refrigerate
