Pina Colada

San Diego is known for its breweries like Stone Brewery and Ballast Point. It’s been fun checking them since we moved here. I was checking out the different types of beer Ballast Point had at the grocery store and noticed that they also made vodka. It wasn’t just any vodka but Horchata flavored vodka. Horchata is a milky yet dairy-free drink thickened with almond and rice and flavored with cinnamon. It’s creamier than rum, which you normally find in pina colada’s, but has some of the same spice. I thought it would be a great substitute although spiced rum will do just fine.

Ingredients

  • 2 ounces Fugu Horchata Vodka from Ballast Point (or spiced rum)
  • 6 ounces Pineapple Juice
  • 2 ounces Coconut Cream
  • ½ cup Fresh Pineapple, cubed

Instructions

  1. Fill a cocktail shaker two-thirds full of ice cubes.
  2. Pour in the rum, pineapple juice and coconut cream and shake well.
  3. If you don’t have a cocktail shaker just fill a very large glass with ice and stir the vodka (or rum), pineapple juice and coconut cream until cold.
  4. Strain the pineapple mixture into an ice-filled highball glass.
  5. Add the pineapple chunks and then serve.
