Bottoms Up | Sparkling Lemon Rosemary Cocktail

Three readers love this post.
It’s good to live near me and be available around happy hour because I like to invite friends over to sample my latest cocktail recipes. I gave a glass of this Sparkling Lemon Rosemary Cocktail to my friend one afternoon and she took a big swig thinking it was just champagne. It looks light and pretty but the bourbon makes it a serious drink. She looked a little surprised, gave her glass a double take, said ‘I like it’ and then went back for a second sip. Champagne, lemon and rosemary are all delicate flavors but adding a little bit of bourbon gives it a strong kick. I may need to make this again for my sweetheart as Valentine’s Day is approaching.
Bottoms Up | Sparkling Lemon Rosemary Cocktail
Serving Size: 2
Lemon Wedge (if it’s not a juicy lemon, use 2 lemon wedges)
2 inch sprig of rosemary plus extra for a garnish
1 teaspoon Honey
1 ounce Four Roses Bourbon
Champagne or Prosecco
Place the lemon, rosemary, honey and bourbon in a cocktail shaker or glass with a flat bottom and muddle until the rosemary and lemon have broken down and their flavors have combined.
Pour the strained liquid into 2 champagne glasses.
Top each glass with champagne and serve with sprigs of rosemary as a garnish.
