We are currently in the middle of a cross-Canada tour to celebrate the country's 150th birthday by making cocktails that connect ingredients with the land and its memories.
The Parliament Pop is our creation to celebrate the province of Ontario.
When I was growing up (in Ontario), I would consume A LOT of cherry coke. What better way to pay homage to the memory than to make an adult-version cherry coke?
We took Dillon's Small Batch Distiller's Cherry gin, made up an epic Cola Syrup (lemon, lime, orange, lavender, ground kola nut, cinnamon, nutmeg, star anise, citric acid, vanilla, turbinado sugar), Dillon's La Carnita Mole bitters, lime juice, and a bit of soda.
BAM Adult-version cherry coke.
