I was so excited when I spotted fresh chamomile at the market on Saturday. These little daisy look-alikes have a sweet, citrus aroma that's irresistible.

Besides the numerous health benefits chamomile provides, I love the delicate, slightly floral, citrus & apple flavor. I knew it would be delicious in an Old Fashioned variation, inspired by Lucia' s Honeyed Old Fashioned.

CHAMOMILE & HONEY OLD FASHIONED

  • 1.5 oz. Unpeated, fruity & nutty Scotch Whisky, such as Glen Grant 10 Year Old
  • .5 oz. Chamomile Honey Syrup*
  • 1 dash Orange Bitters

Combine ingredients in a mixing glass with ice and stir for 10 seconds. Strain into rocks glass over one large cube and garnish with chamomile flowers.

*To make Chamomile Honey Syrup, combine 1 handful of chamomile flowers (or 1 teabag) with 1/3 cup of honey and 1/3 cup of water in a medium saucepan over low heat. Stir to dissolve honey and remove from heat. Strain into a jar or container and allow it to cool completely before use.
