Clairin Call

Wild beauty; the bounty of aromas; the fullness of flavor; the amazing unknown frontiers; this is a Clairin Call. So my partner in Rum/Rhum Marie King, Rum Expert, Drink Master and Program Director for LA's oldest Tiki Bar, the Tonga Hut brought me something to try-- and they were very interesting. I only had a brief visit, so no long rambles, but here are some observations.
Clairin Sajous, this one was the first one I tried and that was a lucky guess to start with because it was most in accordance with expectations. Big chewy cane, dry sparkling aromatics, punchy minerality and layers of flavors that ranged from orchard scents, dehydrated stone fruits and sapid mineral complexity with a soft citrusy metallic character that was quite lovely.
Clairin Casimir, was my next and literally my accidental order was perfect. Maybe Marie put them in front of me this way. That would make sense. Casimir, what can I say? HUGE bacterial influence, I mentioned several times that it seemed like fermented buttermilk. Wild yeast and wonderfully rich mouthfeel. So intricate and evocative I would need many tasting to pin down the flavors better, but that would be a fun task.
Clairin Vaval, number 3 . . . wow. So much saline and petroleum. The bacterial influence was super obvious and the experience was monumental. I am actually feeling slightly at a loss to describe this well because the tasting/aromatics I already mentioned were so dominant in my memory (saline, petrol, and bacterial ferment)--plus everyone was showing up, so my attention was taken.
