On National Pick Strawberries Day, pick a strawberry with the purpose of using it in a freshly created homemade cocktail. These recipes incorporate strawberries into three classics: the mojito, spritzer, and daiquiri. Don’t have a strawberry farm nearby to harvest your own fruit? Your local farmers market will almost certainly have a supply of delicious organic fruit, fresh from the fields. While you’re there, stock up on extra for freezing. It’s always nice to have an extra supply on hand for delicious strawberry drinks all month long.

Strawberry Mojito

2 ounces Bacardi Anéjo Rum

1 ounce strawberry simple syrup

½ ounce lime juice

1 spring of mint

2 ounces Schweppes Club Soda

Directions

Muddle the sprig of mint in the Bacardi Anéjo rum until the rum turns a light shade of green. Strain the rum mint mixture into a new shaker, and add the strawberry simple syrup and lime juice. Shake well, then pour into a highball filled with ice. Top with club soda and serve.

Strawberry Simple Syrup

In a small saucepan, combine 1 cup of fresh strawberries with 1 cup of sugar, and 1 cup of water. Bring to a boil and then simmer for ten to twenty minutes, or until the consistency becomes similar to jam. Remove the pan from the stove and strain the liquid into measuring pitcher or Mason jar to filter out the remaining strawberry pieces. Allow to cool before using.
