Cheese and chocolate are wonderful pairings with more than just wine. The pure fruit flavors in some craft cocktails can lend themselves to pair perfectly with salty cheeses and sweets.

I love the combination of fresh chevre and white chocolate, and with the addition of a berry jam it is a pairing that has been a favorite with guests on more than one occasion. This slightly more posh spin on that includes the elegant French beauty Bucheron, a bloomy rind goat cheese hailing from the Loire Valley, and a local white chocolate from Nunu, a Brooklyn based craft chocolatier. Bringing a sweet, tart and bubbly cocktail into the mix elevates this combo to the next level, pure delicious perfection. On it’s own or as a finish to a sweethearts meal it’s a winner.

The Scarlet Vixen
2 ounces Greenhook Ginsmiths Beach Plum Gin Liqueur
1/2 ounce Luxardo Maraschino Liqueur
1/2 ounce Dolin Dry Vermouth
2 dashes Bittermens Burlesque Bitters
Juice of one medium lemon
1/2 ounce simple syrup

Build above ingredients over ice in shaker and mix vigorously. Pour into chilled glass and top with 2 ounces of dry bubbly rose.
Val de Mer Sparkling Rose, France (or your favorite dry Rose Sparkling)

Garnish with fresh mint sprig and fresh raspberries. Enjoy!
