I am still recovering from Tales of the Cocktail this week and needed a fresh and semi healthy cocktail. My recipe today is a reflection of this humidity and the first cocktail I think about drinking in extreme heat. This is a classic margarita spiked with watermelon and coconut water. I love using coconut water in cocktails because it adds a hydration element that you can't get from regular water. It also adds a hint of coconut flavor to the drink, which marries so well with the watermelon and tequila. Let's go drink some margaritas together!
