It’s that time of year when I start craving cocktails at noon on Saturdays. The weather is beautiful, and after Kendall and I trek up to the top of Nob Hill from the market with pounds of stone fruit and tomatoes nothing sounds better than a refreshing cocktail.

I got the most beautiful thyme and some heirloom curly cucumbers on Saturday—they worked perfectly with gin in this thirst-quenching cocktail.

Cucumber Thyme

2 oz. Gin

¾ oz. Simple Syrup

¼ Lime, cubed

3 Cucumber Slices

1 Thyme Sprig

Splash of Soda

Muddle thyme, cucumber, lime, and simple syrup in a pint glass. Add ice, then gin, and stir well. Double strain into a rocks glass over fresh ice. Top with soda and garnish with a thyme sprig.
