Today we celebrate “Straya Day” in Australia. A day of mate-ship and pride, bringing together plenty of fair dinkum food and friends. And what is more Aussie than the humble Lamington? How about a drunk one? Cue the music…….I give you the Drunken Lamington Chiller……….Advance Australia Fair!
I love a sunburnt country, a land of ice cold beer. Of cockatoos and thongs as shoes; let's hear a round of CHEERS!
This icy treat is my best attempt at combining the simple pleasures of chocolate, coconut and cake, so that you can slam it down fast and get back to your game of backyard cricket.
I didn’t have time to bake, but I always have time for cocktails!
Drunken Lamington Chiller
Serves 3
500gm Ice
2 shots Nutella Liqueur (or Chocolate Bailey’s if you don’t have any Nutella Liqueur left!)
1 shot Whipped Cream Vodka
1 shot Cake Vodka (optional, but it does give it that sponge cake feel, substitute for a few drops of Vanilla essence )
1 shot Coconut Rum
100gm Pouring Cream
For garnish:
Whipped Cream
Chocolate syrup
Shredded Coconut
Add all the Alcohol to the Thermomix bowl with 250gm Ice, Blitz on speed 6 for 20 seconds.
Add remaining Ice and Cream to Thermomix bowl, Blitz on speed 5 for 10 seconds.
Drizzle Chocolate Syrup around a milkshake glass.
Rim the edge of your glass with additional Chocolate Syrup and roll into Shredded Coconut.
Pour your Drunken Lamington Chiller into the glass, top with Whipped Cream and drizzle more Chocolate Syrup over the top, sprinkle with Shredded Coconut.
I’ve also garnished with a couple of Chocolates left in my fridge, but how awesome would this look with a freshly baked leamington resting on top??
Now I don’t this often, but I am going to give you some substitutions for those who would like to have a Sober Lamington Chiller (Not very Australian, but I won’t tell anyone!) 2 shots Chocolate Syrup, 1 shot Coconut Cream and a few drops of Vanilla Essence all substitute for alcohol.
Have a Happy Australia Day, and seriously stay out of the sun, no-one actually loves a sunburn!
