Easter Peeps Gin Rickey

This delectable Easter cocktail was created with classic Easter treats in mind. It was inspired by the classic gin rickey cocktail, which combines gin, lime juice, and club soda. Though the typical “rickey” is unsweetened, we wanted this Easter cocktail idea to represent well known sugary fun found at any egg hunt. This mixed drink recipe is very simple, and we recommend that you mix them, and serve them right away. The sugar in the Peeps candy and jelly beans will start to dissolve as soon as it comes in contact with water. This adds color and flavor, but the colorful presentation will be best when the cocktail is freshly made.
Easter Peeps Gin Rickey Cocktail
- 1 part Hendrick’s Gin
- 1 part jelly beans
- 2 parts grapefruit sparkling water
- ice
- Peeps Easter candy
- colored rim sugar
Take a double old fashioned glass, and wet the rim with water or grapefruit juice. Roll the edge of the glass in colored rim sugar until the entire lip of the glass is covered. Carefully drop in one part jelly beans, about 1 ounce. It’s best to limit the mixture to fruit flavored jelly beans only, and remove any strong, unusual flavors, like licorice or buttered popcorn. Fill the glass to the top with ice. Add one part Hendrick’s gin, then top off with grapefruit sparkling water. Just before you serve, float one Peeps candy chick on the top.
