I was super excited to be asked to re-create this classic cocktail, originally from Laura Moore at The Epicurean Hotel Edge rooftop bar. I made a few minor changes, but this cocktail is PERFECT to be pre-batched for a large crowd!


The Apple Clause

1 1/2 oz Four Roses Bourbon Small Batch
3/4 oz Apple Cinnamon Tea syrup (see my variation below)
1/2 oz Lemon Juice
Dash of angostura bitters

Shake and strain into a chilled coupe and top with sparkling wine (prosecco, champagne or Apple Cider.)

Garnish with an orange twist or apple slice

Apple Clause

The only change I made to this was in the simple syrup. I did regular 1:1 sugar/water and then added apple slices (about a half apple worth), cinnamon, and star anise. It made an AMAZING simple syrup that I have been using in a variety of cocktail and hot teas since!

To pre-batch this cocktail, double/triple/quadruple (etc) the recipe as needed with everything but the bubbles. You can shake up individual cocktails in groups and then top with bubbles before serving. SUPER easy and this is one tasty drink!
