Fuzzy Friday: Pomegranate Mojito

I love the scents and flavors of the season, and being that I love refreshing fruity drinks, this is one that I think is perfectly seasonal for the winter, yet refreshing enough that you can make really any time of year. The colorful red and green of this drink make it festive to make when you’re entertaining this season. It’s easy enough to make in a pitcher for a croud or simple enough to make for a few.
Pomegranate Mojito
- 2 TBS sugar
- 1 slice lime
- 12 mint leaves
- 1/3 c white rum
- 1/4 c pomegranate juice
- club soda
Muddle sugar, mint and lime in the bottom of a glass. Add rum and pomegranate juice and stir well. Add ice. Top with club soda and garnish with mint and pomegranate arils. Serves 1.
