Gimlet Cocktail Recipe with DIY Lime Cordial

After picking up a bunch of limes on sale, I set out to discover the best way to use fresh limes in a cocktail. Homemade lime cordial (a variation of simple syrup) seemed like a good thing to try out.
Lime Gimlet Recipe
Note: This is based on the recipe from Jim Meehan’s The PDT Cocktail Book (using both fresh lime juice and lime cordial).
Ingredients
- 2 oz Gin (Note: I preferred St. George terroir, Brad preferred Hendrick’s)
- 3⁄4 oz fresh squeezed lime juice
- 3/4 lime cordial (see below)
- Garnish: lime wedge
Directions
Add all ingredients to cocktail shaker, shake well. Strain through fine mesh strainer into chilled cocktail glass. Garnish with a lime wheel.
DIY Lime Cordial Recipe
Sure, you can just use Rose’s Lime Juice, but this is easy to make and so much better.
Ingredients
- Zests of 6 Limes
- 1 cup lime juice
- 1 cup sugar
Directions
- Make simple syrup by combining sugar and water in large saucepan over medium-high heat. Stir until sugar dissolves (liquid will ‘clear up’). Remove from heat and allow to cool.
- Add lime zest to simple syrup in container with a lid and allow to infuse at room temperature for at least 10 minutes.
- Strain through a fine mesh strainer into a resealable container (we like mason jars)
