Summer is here and the Mojito is a classic drink perfect for making in big batches for a crowd. Try swapping strawberries for other fresh fruits like peaches or blackberries.

This cocktail uses an aged Añejo rum instead of white rum makes this drink a little smoother and gives it its gold hue.

Ingredients (for 2)

  • 3.5 oz Brugal Añejo Rum
  • 2.0 oz Mint Infused Syrup
  • 1.0 oz lime juice
  • Top with Strawberry Spindrift
  • Prickly Pear Bitters
  • Dried Lemon Garnish
  • Fresh mint and strawberries (optional)

Directions:
In a chilled glass, add the mint simple syrup, strawberries and mint leaves (if using). Press firmly with the back of a spoon or a muddler to break apart the strawberries and press the mint. Avoid pulverizing. Stir in the lime juice and rum. Fill the glass with ice and top with strawberry Spindrift and a few drops of bitters. Garnish with dried lemon.
