Today starts a week of fantastic food and drink preparation for the Super Bowl. I am so excited given that the Seahawks are playing again this year. To mark the occasion I am making you a combination of cocktails and small bites to match. I haven’t really done any food pairings on my website but I love to cook and thought these pairings may help you create a fun party for Sunday. If you are not into the football or the Super Bowl these ideas may help you find a perfect party match for an upcoming date night, dinner party, or cocktail party. Today, I am sharing a simple pairing of chicken tacos and a pineapple grapefruit margarita. The chicken tacos have a pineapple salsa that compliments the pineapple in the margarita. I love using pineapple in winter because it sweetens and gives a tropical flair to cocktails and dishes. I may be in love with pineapple! Cheers to the food and drink pairings! I hope you like them! Super Bowl Pairing Day One

Grapefruit and Pineapple Margarita and Pineapple Chicken Tacos

Recipe: Grapefruit and Pineapple Margarita

Ingredients

1.5 ounces of tequila

2 ounces of grapefruit juice

3 ounces of pineapple juice

1 teaspoon of agave

½ lime, juiced

½ cup of ice

Garnish: Pineapple wedges and grapefruit slices

Instructions

In a large glass combine tequila, grapefruit juice, pineapple juice, lime juice, and agave

Salt the rim of the serving glass

Fill serving glass with ice

Pour tequila mixture into serving glass wit

Garnish with pineapple wedges and grapefruit slices

Serves: 1

Recipe: Pineapple Chicken Tacos

Ingredients:

1 cooked chicken breast seasoned with salt, pepper, chili powder, and cumin

½ cup pineapple salsa (made with salt, pepper, cilantro, onion, pineapple, pineapple juice, and ½ lime juiced and ½ of red pepper)

4 corn tortillas

Cilantro and lime wedges for garnish

Instructions

Shred cooked chicken breast

Make pineapple salsa by combing equal parts of chopped cilantro, onion, pineapple, and red pepper. Add ½ ounce of pineapple juice and ½ of a lime juiced. Add salt and pepper to taste

Heat corn tortillas

Make tacos by putting chicken and salsa onto the heated tortilla

Garnish with lime and cilantro

Serves: 2
