Irish Tart
1 1/2 ounces of Michael Collins Irish Whiskey
1/2 ounce of fresh blood orange juice
1/2 ounce of fresh grapefruit juice
1/2 ounce of fresh myer lemon juice
Absinthe rinsed glass
1/4 ounce spiced local honey syrup
2 dashes of Bitter Truth Orange Bitters
2 dashes of Fee Bros. Whiskey Barrel Aged Bitters
Place a splash of Absinthe in an empty coupe glass and coat the inside. Then, toss out the remaining Absinth. In a mixing tin filled with ice add everything else, and shake until cold. Strain the cocktail into the chilled coupe glass.
