This is a drink I made for my guest night at Ursa earlier this week. Anytime I do my guest nights at Ursa, I usually just make stuff up as I go along and work with whatever Robin has behind the bar there (which is usually a bunch of homemade stuff).

This time was different, I showed up with a plan, and this drink was part of it.
Blind Tiger
1.5oz Canadian Rye
1oz Earl Grey Tea Syrup*
.5oz Pineapple Juice
.5oz Lemon Juice
2 Dashes of Angostura Orange Bitters
1-2oz of a hoppy IPA

Shake the first 5 ingredients on ice for about 10 seconds. Double strain into a collins glass filled with ice and nice IPA basement. Garnish with a straw and a sprig of rosemary.

The name comes from a Simpsons episode where prohibition is enforced. Just in case you missed that.

*Earl Grey Syrup: This is a 1;1 simple syrup with two bags of whatever earl grey tea you like added once the sugar has dissolved. I let them sit for about 30 minutes. You don’t want anything too tannic.
