INGREDIENTS:
1 oz. Amaro Lucano
1 oz. Solera Style Rum
½ oz. Fresh Squeezed Lemon Juice
¼ oz. Gomme Syrup
Fill up with 3 oz. Prosecco
Foam (1 Lt canister-20 servings)
3 oz. Solera Style Rum
5 oz. Dry Anise Liqueur
8 oz. Pasteurized Egg Whites
6 oz. Fresh Lemon Juice (no pulp/seeds)
Put all ingredients in a whipped cream charger, close lid tight and charge with ISI cartridge. Keep refrigerated. Shake well before serving it.

PREPARATION:
In a shaker add Amaro Lucano, Solera Style Rum, fresh squeezed Lemon Juice, Gomme Syrup and a scoop of ice and shake it for 1, 2, 3, 4, 5 second.
Now strain the cocktail into a champagne flute or a white wine glass and add the prosecco.
We are almost done, but not quiet yet…. Add some foam before serving and a little lemon twist just like in the picture.
The color is for sure making you think about one of the classics..Irish Coffee… but it’s nothing like it! The nose is hypnotized from the anise scent of the foam, the taste is intriguing, love the refreshing sensation of the anise mixed with the sweet and sour of the lemon and sugar balanced right perfectly with the Amaro. I think this is what you call a perfect drink!
