Leo Africanus, a cocktail with two rums and PAMA Pomegranate Liqueur

National Rum Day and it's a Friday... pretty hard to let that one go by, isn't it? Here's a little treat for your happy hour tonight. This cocktail features PAMA Pomegranate Liqueur, which pairs excellently with passion fruit and two rums to give you a tropical treat to kick off the weekend.

LEO AFRICANUS

1 oz PAMA Pomegranate Liqueur
1 oz Appleton Estate Reserve Rum
1 oz Mount Gay Black Barrel Rum
1 oz Fresh Lime Juice, strained
1.5 oz Fresh Grapefruit Juice, strained
1 oz Passion Fruit Syrup
1 dash The Bitter Truth Creole Bitters
Splash soda

Add all ingredients and shake well. Pour into hurricane glass and garnish with lime wheel and orchid. Serve with straws.

Leo Africanus was a very interesting figure in the 16th century, an adventurer and diplomat who, on his travels, wrote a geographic history of North Africa. Since PAMA liqueur is such a delightful representation of pomegranates in liquid form, known and adored in North Africa and the Middle East, a liquid tribute to one of the world's great adventurers seemed fitting. After all, who else do you know who's visited Timbuktu?
