Margarita Salad & Tequila Vinaigrette by Dan Magro
Salads are a tough sell, right? So what better way to indulge than harvesting some healthy organic produce and drenching it in tequila? Today I’m showing you an ingenious way to combine two wonderful things: that happy buzz that makes family time go by a little easier, and nutritious food.
I’m not the first person to integrate food and booze, as you know cakes, sauces, marinades and hundreds of other recipes use beer, wine and liquor to take their sophistication up a notch, however, when the food is heated to a certain degree – the alcohol burns off entirely! I know right? What a waste!
Well this is where everything changes, I’m going to share with you my recipe for MARGARITA SALAD! That’s right people, we gettin’ drunk off a salad! The secret lies in my tequila vinaigrette!
Tequila Vinaigrette
- 2 oz blanco tequila
- 3 oz fresh squeeze lime juice
- 3 oz extra virgin olive oil
- 1 garlic clove
- small handful of Italian flat leaf parsley
- salt & pepper
Place blanco tequila, lime juice and extra virgin olive oil in a measuring glass.
Quick chop the garlic clove and Italian parsley leaves.
Add a pinch of salt and pepper whisk away until everything is properly emulsified.
Hand chopping is key to the rustic vibe of the dish!

Margarita Salad
- 16 oz organic mixed greens
- 1/4 cup almonds
- 1 granny smith apple
- salt + lime slice (optional)
Rough chop the almonds and place in a large bowl.
Add the greens and granny smith apple and dry toss the ingredients.
Incorporate as much or little dressing depending on preference and toss the salad.
*optional* Rub the edges of your bowls with the lime slice and then rim edges with salt. (You can pour rimming salt on a large flat plate to get even coverage on your bowls, depending on their size).
A boozy fun healthy salad!
Prepare yourself, this may be the first time that your guests want MORE salad! Be mindful that this can get you a hefty buzz depending on how much dressing you use, and of course, always enjoy alcoholic salad responsibly!
