Looking for a good summer cocktail? Take a break from margaritas and piña coladas  and try this easy pisco sour recipe. The citrus lends a refreshing brightness and egg white gives it a lively foamy texture. It’s the perfect thing to sip on a hot summer evening. Scared of using egg white in a cocktail? April’s recipe is adapted from Dale Degroff’s “The Essential Cocktail”

Ingredients:
1 egg white
1.5 ounce pisco
1 ounce simple syrup
¾ ounce freshly squeezed lemon or lime
Angostura bitters
Ice

Tools:
A pint glass
Boston shaker
Hawthorne or fine mesh strainer
Chilled Coupe glass

Combine all ingredients in the pint glass, but don’t add ice yet. Seal the Boston shaker on the glass and shake without ice for 30 to 40 seconds. This “dry shake” helps break up the proteins in the egg white and incorporate air. Separate the shaker, add ice, and shake for an additional 30 to 40 seconds to chill the cocktail. Strain into a chilled glass, garnish with a few drops of angostura bitters,  and enjoy!
