One Inch Punch - West Bourget

West Bourget was one of the opening bartenders at FTW; young, talented and service focussed. One of his first drinks on the menu was so popular that it stayed on the menu for two editions. His "cheater" take on a Fish House Punch, the One Inch Punch became a crowd favorite and quite possibly West's signature cocktail that will follow him for his career in one incarnation or another.
This is his original recipe -
1 INCH PUNCH
1.5 oz (45ml) vanilla infused Appleton 12 year
¾ oz (37.5ml) Torres 5 year
0.75 oz (37.5ml) oleo-saccharum black peach tea syrup
0.5 oz (15ml) lemon juice
0.5 oz (15ml) water
Glass: tea cup and saucer
Method: Stir all ingredients, strain into glass
Garnish: lemon channel around the spoon & grated nutmeg
VANILLA INFUSED APPLETON 12 YEAR
750mL Appleton 12
3 vanilla beans
- Sous Vide at 65C for 3 hours
- Bottle
PEACH BLACK TEA OLEO SACCHARUM
1kg turbinado sugar
rinds of 10 lemons
- mix and muddle until sugar begins to extract lemon oil
- Let sit for 1/2 hour
- Combine with 1kg fresh peach black tea
- Strain out lemon rind
