My favourite thing to do when it is hot, is make cocktails. Fresh, fruity cold cocktails. All of the fresh ingredients came straight out of my Summer garden. The Passionfruit pulp is extracted using a similar technique to my Passionfruit Juice Concentrate recipe, only in smaller quantities. of course, you can scale everything up to create enough for a.

Passionfruit Mojitos

6 small Purple Passionfruit

1/4 cup Water

3/4 cup White Rum

3 tbsp Raw Sugar

1/2 cup Fresh Mint

Juice of 3 Limes

Lemonade to serve

Ice to serve

Mint and Lime slices for garnish


Passionfruit Juice

Scoop Passionfruit pulp and seeds into the Thermomix bowl.

Add 1/4 cup water and mix on Reverse, speed 4 for 1 minute.

Strain mixture through fine sieve and retain seeds for garnish.

Set aside juice

Passionfruit Mojito

Without washing the bowl, add Mint and Sugar to Thermomix bowl.

Muddle on Reverse, speed 4 for 20 seconds.

Scrape down sides and add rum, lime juice and a handful of ice to the TM bowl.

Mix on Reverse, speed 4 for 20 seconds or until sugar dissolves.

In a tall glass, pour mojito mixture over ice up to the halfway point.

Pour Passionfruit Juice over the back of a spoon to create a layered effect.

Top glasses with lemonade.

Garnish with a slice of lime, sprig of mint and a spoonful of passionfruit seeds.
