WEB POMOGRANATE COCONUT 051

INGREDIENTS :

1 oz. Rum

1/2 oz. Cruzan Vanilla Rum

3/4 oz. Coco Loco Coconut Milk

3/4 oz. Pom Coconut

6-8 Mint Leaves

3 Lime Wedges

1/4 oz. Simple Syrup

GARNISH:

Fresh Coconut

Mint Leaves

Pomegranate Seed

PREPARATION :

In a mixing glass place the lime wedges, simple syrup and the mint leaves and muddle it until you have a nice pulp. Add all remaining ingredients and pour it into a shaker with a scoop of ice and shake vigorously. You may have to shake it hard and for longer then 5 seconds to ensure that the thick coconut milk mixes well with all the other ingredients.

Now is time to serve it! I suggest straining and pouring on the rocks in a highball glass but you can also strain and pour into a nice chilled martini glass.. you choose! Last but not least, I carved a heart shaped garnish out the fresh coconut and added mint leaves and pomegranate seeds.

The color is a muted burgundy and the scent will bring back memories of the last time you spent some good vacation time on an island somewhere far far away from the daily grind. The taste is balanced... the acidity of the fresh citrus is paired to the sweetness of the coconut.
