Poolside popsicles are the perfect way to cool off this summer. If you love popsicles and love cocktails, there’s nothing better than these easy-to-make treats to have on-hand poolside at your next summer gathering!

Salty Dawg Popsicle

Ingredients:

  • 1/4 cup Tanqueray Gin
  • 3/4 cup Freshly pressed grapefruit juice
  • 1 cup Water
  • 3/4 cup Sugar

Preparation: In a mixing pitcher, combine all ingredients. Stir. Pour into popsicle molds and let freeze over night.
Dip in salt.

Spiked Strawberry Pina Colada Pops

Ingredients:

  • 3 cups Fresh cubed pineapple
  • 1/3 cup Unsweetened coconut milk
  • 1/2 cup Water
  • 3 tbs. Sugar
  • 1/3 cup Bacardi Rum
  • 1 cup sliced strawberries

Preparation: Puree all ingredients (except strawberries) in blender until smooth. Strain through a fine-mesh sieve and discard solids. Add strawberries and pour into molds and freeze for 30 minutes. Insert sticks and freeze overnight.

Honeydew Cucumber Margarita Popsicle

Ingredients:

  • 1 cup Honeydew juice (approximately a whole melon weighing 1 lb)

  • 1/3 cup Cucumber juice (approximately half a cucumber weighing 5 oz.)
  • 1/2 cup Patrón Tequila
  • 
1 tbs. Triple sec
  • 1 tbs. Fresh lime juice
  • 1 tbs. Mint simple syrup
  • *
3 large Mint sprigs

Preparation: Place the honeydew and cucumber in a food processor or a blender and process until everything is pureed. Add tequila, triple sec, lime juice and mint syrup and process for another 20-30 seconds to blend well. Pour mixture into popsicle molds. Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight. To release popsicles run hot water on the outside of popsicle molds for a 2-3 seconds.

*How to Make Mint Syrup
You will have more syrup than you need. Save for other cocktail uses.

Ingredients:

  • 
1/2 cup Water
  • 1/2 cup Sugar
  • 1 cup Mint leaves, loosely packed

Preparation: Place sugar and water in a pot over heat until sugar dissolves. Allow mixture to cool to room temperature and place mint leaves in mixture and muddle. Allow mint leaves to steep for 20 minutes. Strain and discard leaves.

Lychee Saketini Poptail

Ingredients:

  • 1 1/2 cup Limeade
  • 3/4 cup Sake
  • 16 oz. Lychee, peeled and seeded (approximately 20-22 regular size lychees)
  • 8 oz. Honeydew, pureed (approximately 1/4 of a regular size honeydew)

Optional: Raspberries to garnish

Preparation: Place limeade, sake, lychee and honeydew in a food processor or blender and process or blend until pureed, about 1-2 minutes. Pour mixture through a medium strainer. Pour strained mixture into popsicle forms —add raspberries now if you are garnishing the popsicles—and freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight.

Limoncello and Raspberry Whiskey Sour Popsicles

Ingredients:

  • 1 pint Lemon sorbet
  • 4 oz. Limoncello
  • 2 oz. whiskey + 1/2 oz. whiskey
  • 2 1/4 oz. Raspberries (about 1/2 cup or 16 regular size raspberries)
  • 4 oz. Lemonade

Preparation: Place lemon sorbet, limoncello and 2 oz. whiskey in a blender and process until smooth. Set aside. Place raspberries, lemonade and 1/2 oz. whiskey in a blender and process until smooth. Pour raspberry mixture into liquid measuring cup or a cup with a spout for easy pouring. Fill wells ¾ of the way up with limoncello mixture. Slowly and carefully pour raspberry mixture against side walls of wells for a layered effect. Cover top of popsicle form with foil and cut a tiny hole in the center of each well. Place popsicle stick through the hole. Place in freezer until frozen.

Bourbon Butterscotch Latte Popsicles

Ingredients:

  • 16 oz. Strong or extra bold coffee, room temperature
  • 
4 oz. Heavy cream
  • 
4 oz. Four Roses Bourbon
  • 
2 oz. Butterscotch sauce

Preparation: Add all ingredients into a blender and mix to combine. Pour mixture into popsicle molds. Freeze for about 2 hours or until mixture starts to solidify enough to hold a popsicle stick upright. Insert popsicle sticks and finish freezing popsicles overnight.

Watermelon and Blackberry Margarita Poptail

Ingredients:

  • 20 oz. Watermelon (1/2 a small watermelon)
  • 3 oz. Blackberries (7-9 regular sized berries; not the giant obscene ones that are the size of a thumb)
  • 4 oz. Limeade
  • 4 oz. Pura Vida Tequila
  • 2 oz. Triple sec

Preparation: Place all ingredients in a blender and puree until well blended. Pour mixture into popsicle wells. Cover top of popsicle form with foil and cut a tiny hole in the center of each well. Place popsicle stick through the hole. Place in freezer until frozen.
