If you're a fan of whiskey cocktails then you are probably familiar with the Brown Derby. It's a simple and delicious cocktail that is both sweet and sour. But what about spicy? A simple twist on the honey syrup portion of this cocktail and you have a Spicy Derby.

Portland's local honey company, Bee Local, has an amazing hot honey. I swapped out regular honey to add a kick to the honey syrup typically used in a Brown Derby. For this cocktail I did make honey syrup with a 1:1 ratio of honey to water, brought to a simmer and then let it cool down. I will note that Bee Local's hot honey already has a thinner consistency (similar to honey syrup) so in a pinch (or just feeling lazy) you could skip making the honey syrup step. And I know what you're thinking... how "hot" can honey really be? Believe me, it has a kick! And it's a fun way to spice up this classic cocktail.

Spicy Derby Recipe:

  • 2 Oz. Bourbon
  • 1 OZ. Fresh Grapefruit Juice
  • 1/2 Oz. Hot Honey Syrup

Shake ingredients with ice until chilled, then strain into a chilled glass. Garnish with a slice of grapefruit.
