I am working on our spring menu. I love Ransom Gin and Green Chartreuse. A Collins is always a spring and summer favorite, so when I came across the fresh tarragon, a realized I could create an herbal variation of the Collins for a bit more complexity and uniqueness. It is amazing!

Ingredients
1 oz. Ransom Old Tom Gin
.5 oz Green Chartreuse
.5 oz Fresh Lemon Juice
.5 oz Simple Syrup
Soda Water
Two Sprigs Fresh Tarragon
Directions
Place Collins ice in a Collins glass.
In a shaker, lightly muddle one tarragon sprig. Add ice, gin, Chartreuse, lemon, and syrup. Shake vigorously for 30 seconds. Double strain into Collins glass. Top with soda or seltzer water. Stir. Garnish with a tarragon sprig.
