A variation of a Vodka Rickey
The Rockin' Fogo is made from locally foraged spruce, picked by our staff who risked their lives amongst herding caribou on the magical Island of Fogo!

Fogo Island Inn, Fogo Island, End of the Flat Earth, Newfoundland, Canada
Ingredients
Vodka
Spruce
Lemon
Peppermint Tea Syrup
Perrier Water
Directions
For the Spruce Vodka:
- Spruce buds freshly picked during spring
- Iceberg Vodka
- Chill the Vodka in the freezer, bag it with the spruce "sous-vide" and sealed
- Warm the Vodka-Spruce Bag for 20 minutes in a 70C/160F bain-marie
- Let it cool down to room temperature
- Strain and filter it
The peppermint tea syrup is a 1/1 ratio simple syrup but infused with peppermint tea
For the Rockin' Fogo:
Shake:
2 oz Spruce Vodka
1 oz Lemon Juice
3/4 oz Peppermint Tea Syrup
Top up with Perrier Water
Garnish with a spruce bud and half a lemon, as seen on the picture
