This month’s theme for Mixology Monday is “Resin.” I thought about “Resin” a bunch and I was coming up with things like insects trapped in amber… and sticky pine pitch… and the stuff that you use on violin bows. Which is technically “rosin”, but you see where I’m going here. All of these are resin-y things, but here’s the problem, the directions say: “Create a delicious cocktail.” So, yeah.

They also mentioned Rosemary, and I just happened to have a bush that needed to be rescued from the delightful chill (ahem) that had descended on New England last week. So I bring you “Rosie Loves Toddy” and yes, it’s delicious!

Rosie Loves Toddy

Rosie Loves Toddy

2 oz brandy
2 oz boiling water
1 oz rosemary syrup (recipe below)
1/2 slice lemon
sprig of rosemary

Put the brandy, syrup and lemon in cup. Pour the boiling water over it and give it a stir. You can press on the lemon with the spoon to make it as lemony as you like. Add the sprig of rosemary and enjoy (with or without some episodes of bad 80′s TV).

Rosemary Syrup

1 cup white sugar
1 cup demerara sugar
1 1/2 cups water
6 (or so) sprigs of rosemary

Combine all the ingredients in a saucepan and bring to a boil. Simmer for 15 mins, then let cool. Strain the rosemary out, and store in the refrigerator.
