How to make a Ruby ‘n’ Rosemary Fizz
Kangaroo Island O Gin is an intriguing spirit and its botanical’s work well with rosemary and citrus. Both grapefruit and lemons are readily available in South Australia almost all year round. A fizz is light and refreshing.
Ingredients
- 60mL Kangaroo Island O Gin
- 30mL Fresh Lemon Juice
- 20mL Ruby Red Grapefruit Juice
- 20mL Sugar Syrup (1:1)
- Egg White
- 60mL Soda
Instructions
- Add the egg white and a single ice cube to your cocktail shaker
- Shake to emulsify the egg white (this is called ‘dry shaking’ – the single ice cube helps chill and create a tight seal with the steel shaker)
- Add the gin, juices and sugar syrup to your cocktail shaker
- Shake and double strain over fresh ice
- Top with a dash of soda
- Garnish with sprig of rosemary and wedge of ruby red grapefruit
