If you ever find yourself working late and need a little spark to perk you up…or even next time your feet are barking and your eyes are sagging, but you just can’t call it a night yet, this Skinny Expresso Martini may be exactly what you need! Avoid the expresso martini on the cocktail menu at your favorite lounge, it will have at least 400 calories depending on decadent ingredients. And this one, I promise, is just as good!

We are working late tonight!

A little back story here; right now, as I write this, it’s TGI – almost – F and not just any Friday, it’s my birthday eve. So I am on a mission to get stuff done, so that I am swimming in guilt free fun all weekend long! I’ve committed to sitting at this desk tonight and working straight up until my boyfriend picks me up in the morning to kick off the weekend with water park fun before we roll into cocktails with friends and wine tasting and all the other fun tricks we have up our sleeves this weekend.

So how do you keep yourself motivated and positive when working late and others are out living up the San Diego Comic Con fun (or sleeping)? How about an “I’m working late” SkinnyTini? A.k.a the Skinny Espresso Martini. Lucky for me, I’m a Skinny Mixologist and I keep a pretty well stocked bar at most times. So it took about 5 seconds to come up with this easy concoction and it was so good, I was inspired to write a quick Friday Cocktail blog about it.

These ingredients are easy to find and this really should replace what most bars serve as it is such a significant calorie savings for really, the same intoxicating, exilirating and motivating exchange.

Skinny Espresso Martini

  • 2 oz Vanilla Vodka
  • 3 oz Today’s Coffee (sweetened with Sweet & Low)
  • 1 T Sugar Free Eggnog Coffee Creamer

Calories: 173 (at least 57% fewer calories!)

Directions: Add all ingredients to a cocktail shaker with ice and shake for 5-10 seconds to cool and mix ingredients. Strain into a martini glass and serve!

It’s really that simple! And you do not need Eggnog Coffee Creamer. That is just what I had in the fridge. Good thing it has the shelf life of Spam. I think it will be there for a while longer, as I don’t use it often. But it makes a great cocktail mixer! And the sugar free versions have 50% fewer calories and are even better options. So if you’re headed to the store anyhow, you may as well save yourself a few more calories.
